Just a little update...

I really am not good at keeping up with this.

I got a letter from the Texas State Board of Public Accountancy and the last two classes I took at Amarillo College do not qualify as classes to fulfill my 150 hours I have to have before taking the CPA exam. SO, I'm back in class this semester. Well back on my laptop for my online classes. At least I don't have to worry about the exam while being on the road on audits.

Speaking of which, I have to go back to Wheeler Sept 9-12. Yuck. It will go easier this time though I think.

Owen is taking a few steps now! I think he'll be walking pretty soon. Tonight he stood up without holding onto anything and took a step. Maybe by 15 months he'll be walking! I am ready to have him running around! (I'm sure I'll recant that when he actually is!)

Kyle is back at school studying engineering. This is what he should have done to begin with! He's going to be great at it.

Maybe I'll have something exciting to post about next! (not pregnant!)

I am not good at this!

I apologize to my 5 readers for never updating! I never remember but I keep up with everyone elses!

Tomorrow is the beginning of 3 crazy weeks. Kyle left for camp this afternoon, and I'm still working full time and start 12 hours of classes tomorrow! I already started 6 hours this past week, but the other 6 start this week, and Kyle's gone the next 4 weeks! Luckily though, I will be with him the last of the four weeks. And I have a lot of help from my friends and family watching Owen while I'm at class, so I'm thankful for that. I just hope Owen doesn't start walking or anything while Kyle's gone. He'll be so sad he missed it!

That's about all for now--I'll probably not update until after these next 4 weeks (at the earliest :) )

Be careful when you sew!







You might accidentally push on the pedal while you're taking pins out right underneath the needle.

It went in on the fingerprint side and out through the nail. Kyle had to use wire cutters to cut it from the machine and then pliers to pull it out. Ouch!

No more RSV!



After 2 weeks of having RSV, Owen is finally better! He went back to Sylvia's (his babysitter) on Thursday and was pretty cranky, but Friday was much better! Hopefully he won't be that sick again! We still have to do breathing treatments--2x/day for the RSV cough, and one at night for asthma prevention. He's done with his steriods for eczema, and tomorrow will be his last day on the antibiotic for his ear infection! And to think I was just bragging that he'd never been sick :P

Maybe I'll be back with more later! I've learned that you can pre-date stuff, so maybe I will catch up with the past 7.5 months!

Recipe Swap

I saw this on Lindsay's blog, I figured this would be an easy way to get me to start blogging! I have a HUGE file of recipes, but they're on my home computer. So this is something I've made a few times and it always turns out pretty good!

BLT Soup

5 slices bacon, finely diced, plus crisp crumbles bacon, for garnish
1/2 cup diced green onions
2 tablespoons butter
3 cups finely sliced iceberg lettuce (I usually just use a small bag of shredded)
1/2 cup instant flour (you can use sifted all-purpose flour)
3 1/2 cups fresh or canned chicken broth, heated to a simmer
1 cup diced fresh tomatoes
1/8 teaspoon grated fresh nutmeg
1/8 teaspoon ground red pepper
1 cup heavy cream
1/4 cup mayonnaise
1/4 cup sour cream

In a 3-quart pot (I use my dutch oven), cook the bacon over medium heat until lightly browned. Add the onions and cook, stirring, until wilted. Add the butter and stir until melted. Add the lettuce and saute for 2 minutes. Sprinkle the flour into the pot, then stir it in until well blended. Remove the pot from the heat and add the hot chicken broth, tomatoes, nutmeg and pepper. Heat the soup to boiling, stirring constantly, then reduce the heat and simmer gently for 5 minutes. Add the cream and mix well.
Mix together the mayonnaise and sour cream. Serve each portion of soup with a dollop of mayonnaise mixture topped with crumbled bacon.

Sometimes I add potatoes (already boiled) and it adds a little more heartiness to the soup!
